As a die hard carnivore, going a day sans meat is a bit of a challenge. But, I have to say, Hugh Fernley-Whats-his-face's chachouka recipe made me feel anything but deprived.
First fry cumin seeds, onion, garlic, chilli and red pepper for 5-10 mins until soft. Add plum tomatoes, passanta, fresh basil, salt and pepper and simmer until the mixture starts to reduce. Then make small wells in the sauce (depending how many people/hunger levels) then crack an egg into each one. Bake in the oven (preheated to 180) for 10 mins until the whites are firm but the yolk is still soft. Serve with salad, grated parmesan cheese and warm foccacia bread. YUM.
