Raspberry cordial

As there was BIG news for the whatdidyouhavefortealastnight crew the day before our Christmas day. (Yes the snake finally put a ring on it) there was bound to be champagne-a-plenty, and yes that's REAL champagne not just £5.95 cava from Amins express.

We needed the perfect accompaniment- that came in the form if homemade raspberry cordial to make super Sophis bellinis. That's just how we roll in E3.

Put 250g of raspberries, 500g of sugar and juice of half a lemon and 250ml of water into a sauce pan and place over a medium heat. Stir and cook for 5-10 mins until the raspberries become to break down.




Add another 250ml of water, bring to the boil and let simmer for another 15-20mins




Put in a food processor and whizz until smooth. Make sure the lid is on properly to avoid being covered in burning raspberry juice.... Thanks mum!



Strain with a sieve to get rid of seeds.



Pour into sterilised bottles and serve with champagne (or Cava when you run out)



Then for added swoon factor from your guests personalise seating by stitching initials onto parcel tags. Looks like the happy couple may have found themselves a wedding planner.. jLO who?!
